Crispy Skinned Salmon a Gold Gourmet Foods Taste Explosion

Adding flare to a classic salmon dish

You will need these ingredients

●     4 x180g salmon fillets with skin on

●     1 kg new or desiree potatoes cut into 2cm cubes

●     ½ bunch finely sliced shallots

●     ½ bunch dill chopped

●     Salt & Pepper

●     200 grams green beans trimmed

●     100 grams toasted almond flakes

●     And 1 cup of Gold Gourmet Foods Ranch and Garlic Aioli or Hollandaise Sauce

 

This is how you make it;

1)     Place potatoes into saucepan and cover with water.  Bring to rapid boil then reduce heat to moderate and cook for a further 3 minutes or until tender when tested with a skewer. Drain and pop into a mixing bowl.

2)    Add Gold Gourmet Foods dressing, shallots and dill and season with salt and pepper before gently mixing with a plastic spatula or wooden spoon while the potato is warm.  This will allow them to absorb the flavours.

3)    Meanwhile, bring a small pan of water to boil and place a medium sized non-stick pan on medium to high heat.

4)    Pat salmon dry with paper towel and generously season skin with salt

5)    Add 2 tablespoons of vegetable oil to the pan then place salmon gently into pan skin side down and cook for around 3-4 minutes each side for medium or longer if desired. 

6)    Remove from pan and rest on paper towel and set aside.

7)    Blanch beans in boiling water for 1-2 minutes then drain and arrange onto plates.

8)    Arrange a generous mound of salad next to beans then top with salmon fillet scatter toasted almonds over top and serve with fresh lemon.
