Coconut Crumb Prawns with Garlic Aioli

Did someone say delicious?  Try the Gold Gourmet Foods Aioli with Coconut Crumb Prawns and Thai Style Salad

Here is your list of ingredients:

●     16 large green prawns peeled and de-veined (leave tails on)

●     1 cup plain flour

●     2 eggs lightly beaten

●     1 cup shredded coconut

●     1 cup of panko or coarse bread crumbs

●     Vegetable oil for frying

●     ¼ red cabbage shredded             

●     ¼ green cabbage shredded

●     2 grated carrots                                

●     ¼ bunch coriander sprigs

●     ½ bunch chopped shallots                        

●     1 sliced red capsicum

●     20 mint leaves                                               

●     juice of 2 limes

●     1 tbsp olive oil

●     And the delicious Gold Gourmet Foods Aioli or Gold Gourmet Foods Chipotle Mayo will add some extra spice.

This is all you need to do

1)     Gently flatten prawns with the palm of your hands and place into a bowl with flour to coat each prawn.

2)    Combine breadcrumbs and coconut in one large bowl and in another bowl place the eggs and gently whisk.  Then take each flour coated prawn, coat in egg and then coat in crumb mix and set aside on a plate.

3)    Heat oil in a wok or heavy based frying pan then cook prawns in batches until golden and cooked through before allowing to drain on a paper towel.

4)    Combine cabbages, carrots, coriander, shallots, capsicum and mint leaves in a large salad bowl and add lime and oil to coat.  

5)    Arrange prawns on a serving platter and drizzle with Gold Gourmet Foods Aioli or Chipotle Mayo.  Garnish with coriander sprigs and chopped shallots and share with friends and family.

Hint: Spice up the salad with a dash of Gold Gourmet Foods Sriracha Mayo for extra creaminess and spice.
